News from Washington State

First, let me say, Jery, the recipe of the crust less crab quiche looks like it must taste wonderful. I always share your recipes with others in my office. The 4th of July came and went quietly here in Wenatchee other than we had a 4 year old granddaughter here for a week while her folks took a mini vacation. They live out of town so don’t always get to see them, she is the same granddaughter that came to visit us in Arizona this past March and came to the computer meeting. We have had weather in the 100’s for many days, now all of a sudden it has dropped and was only 50 this morning when I got up to come to work. We have fires in our area due to carelessness on some folks. They have closed several roads and the sage brush is burning. We can see the flames and smoke from our house. We have not lost any homes in our area, but east of us in the Spokane area, 8 homes have burned as of this morning. This is to be my last day at work here at the hospital for a while, which is fine with us. Mel has 6 more radiation treatments to go and then we are off for a week of fishing and camping with 3 of our 6 children. Mel is doing just fine and not having too many side effects. The doctor is pretty proud of the way he is handling these 44 treatments. With the heat, we have not been out in the yard as much, but Mel is still planting seeds and flowers. Then we wonder why we have to spend so much time in the yard. You know, just some shrubs and rocks would be much easier. Happy Birthday to Bill G. and always so good to hear from all of our Rock Shadow friends. Gas here was $4.14 last week at Costco. I hear that the Costco in Mesa on Power and Hampton has closed and moved to Sossaman and 60 with a gas station. We spoke with friends that live there and they said gas was $4.04 several weeks ago at that Costco. May you all have a great warm summer and look forward to seeing you in the fall.

Ole, from Minnesota

Ole, a furniture dealer from up at Brainerd, MN, decided to expand the line of furniture in his store, so he decided to go to Paris to see what he could find.

After arriving in Paris he visited with some manufacturers and selected a line that he thought would sell well back home. To celebrate the new acquisition, he decided to visit a small bistro and have a glass of wine. As he sat enjoying his wine, he noticed that the small place was quite crowded, and that the other chair at his table was the only vacant seat in the house.

Before long, a very beautiful young Parisian girl came to his table, asked him something in French (which Ole couldn't understand), so he motioned to the vacant chair and invited her to sit down. He tried to speak to her in English, but she did not speak his language so, after a couple of minutes of trying to communicate with her, he took a napkin and drew a picture of a wine glass and showed it to her. She nodded, so he ordered a glass of wine for her.

After sitting together at the table for a while, he took another napkin, and drew a picture of a plate with food on it, and she nodded. They left the bistro and found a quiet cafe that featured a small group playing romantic music. They ordered dinner, after which he took another napkin and drew a picture of a couple dancing. She nodded, and they got up to dance. They danced until the cafe closed and the band was packing up.

Back at their table, the young lady took a napkin and drew a picture of a four-poster bed. To this day, Ole has no idea how she figured out he was in the furniture business.

Recipe of the Week

Mushroom Steak Salad with Walnut Vinaigrette

8 oz. boneless beef sirloin stead (3/4 inch thick)
3 Tbsp. olive oil, divided
1 C. each sliced fresh baby Portobello, shiitake and button mushrooms
2 Tbsp. balsamic vinegar
1 Tbsp. minced fresh thyme or 1 tsp. dried thyme
2 Tbsp. walnut oil
2 Tbsp. finely chopped walnuts
3 C. torn mixed salad greens
1 shallot, sliced
2 Tbsp. crumbled goat cheese

In a large skillet over medium heat, cook steak in 1 tablespoon olive oil for 4-6 minutes on each side or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145°;
medium, 160°; well-done, 170°).Remove from skillet; let stand for 5 minutes before slicing.
Meanwhile, in the same skillet, sauté mushrooms until tender. In a small bowl, combine vinegar and thyme. Whisk in walnut oil and remaining olive oil. Stir in walnuts.
Divide salad greens and shallot between two serving bowls. Cut steak into slices. Top salads with steak and mushrooms. Drizzle with dressing; sprinkle with cheese.
YIELD: 2 servings.

Nutrition Facts: 1 serving equals 602 calories, 48 g fat (9 saturated fat), 75 mg cholesterol, 151 mg sodium, 14 g carbohydrate, 4 g fiber, 31 g protein.

 

 


From Prescott Valley

Not much going on here in the Prescott area. We are in the Monsoon season with some beautiful storms. The Valley has been hit hard. Highway 60 was closed for awhile because of flooding. No storms the past couple of days though.


Not much action this week because of the All Star break. I hope that you did not miss the All Star game as it was great. It lasted 4 hours and 50 minutes in 15 innings being the longest All Star game on record.
 

The Diamondbacks are now in first place, one game ahead of second place Los Angeles, in the Western Division.
